Serves 6

Ingredients:

8 eggs
3/4-cup milk
3 Roma tomatoes, seeded and chopped
8 oz. chanterelle mushrooms, cut into quarters
6 fresh chives, chopped
1/2 tsp. salt
1/2 tsp. ground pepper
1/2-cup grated Parmesan cheese

Tip: Fresh chanterelles cost about $15 per half pound. Canned or dried are less expensive.

Instructions:

  1. Preheat oven to 350F.
  2. In a large bowl, whisk eggs and milk until well blended.
  3. Add tomatoes, mushrooms, chives, salt and pepper. Stir again.
  4. Spray a 9x12-inch baking pan with vegetable oil cooking spray.
  5. Pour the mixture into the pan and sprinkle the cheese evenly on top.
  6. Bake for 20 to 30 minutes, or until well browned.
