Ingredients:
8 eggs 3/4-cup milk 3 Roma tomatoes, seeded and chopped 8 oz. chanterelle mushrooms, cut into quarters 6 fresh chives, chopped 1/2 tsp. salt 1/2 tsp. ground pepper 1/2-cup grated Parmesan cheese
Tip: Fresh chanterelles cost about $15 per half pound. Canned or dried are less expensive.
