Note: This thick herb sauce is as common in Argentina as ketchup is in the United States. It's a must with grilled meat and a common accompaniment to a variety of other dishes.
Ingredients:
1 bunch fresh parsley
8 cloves garlic
1 white onion
1 cup olive oil
1/2-cup red wine vinegar
Juice of one lime
1 tsp. salt
1/2 tsp. ground black pepper
1 tsp. ground chili powder
Instructions:
Finely chop parsley and onion. Mince garlic.
Whisk oil and vinegar together and combine with remaining ingredients.
Baste beef skewers in the final moments of grilling and serve the remainder as a dipping sauce.
