Stuffed Grape Leaves
Mozzarella, tomato, balsamic reduction

8 grape leaves, rinsed
1 large ball of fresh mozzarella, sliced into 4 slices
1 large heirloom or ripe tomato, sliced into 4 slices
2-4 leaves fresh basil leaves, sliced thin
1 cup balsamic vinegar
1/2 cup sugar
Olive oil
Salt, fresh ground pepper

In small sauce pan on medium heat, fill with the vinegar and sugar. Let reduce by half or until syrup-like in consistency.

Lay out grape leaves -- 2 leaves will make one bundle.

Top with tomato, then mozzarella, then salt, pepper, olive oil, and basil.

Roll like a burrito, so the cheese will not melt out when grilled. Once 4 are rolled, brush with olive oil and grill until the leaves are charred. Drizzle with olive oil and balsamic reduction, serve immediately.
