1 tablespoon Dijon mustard
Juice of 1 lemon
1/4 cup canola oil
2 cups shredded red cabbage
1/4 cup sliced green scallions
Salt and black pepper to taste
Mix mustard with lemon juice. Whisk in oil and check for seasoning.
Toss with cabbage and scallions.
