Ingredients:
3 cups flour
2 eggs
1/2 cup parmesan cheese
2-1/2 cups ricotta cheese
Salt and pepper (about 1 tsp. each)
Directions:
Prep: 10 minutes
- Measure out flour, eggs, and parmesan cheese.
- Create ricotta mixture in a medium-sized bowl by blending eggs, ricotta, salt and parmesan.
Dough: 20 minutes
- Place flour on cutting board; create well in center.
- Add ricotta mixture to the center well.
- Begin folding flour into well, and knead until ball forms.
Forming and the gnocchi: 10-15 minutes
- Roll out long "worms" of dough.
- Cut 1/2-inch pieces; set aside.
- Heat water on high in large pot; when water is boiling, add gnocchi.
- Drain and place in serving dishes.
Gnocchi is now ready for sauce.
