The Ristorante Covo dei Saraceni in Positano, Italy, serves this wonderful frozen cocktail on the sun-drenched shores of the Amalfi Coast. Serves one.
Ingredients:
2 oz. top shelf silver tequila
1/2 oz. fresh lime juice
1/2 oz. lime cordial
2-3 sliced, hulled strawberries (slice, cut and freeze all fruit the day before)
1 cup cubed pineapple
2 kiwis peeled and chopped
1 Tbs. superfine sugar
Splash of Campari
Sprig of fresh mint to garnish
Lime wedge to garnish
1 cup ice
Preparation:
Put tequila, lime juice, cordial and Campari into blender. Add fruit, then ice and sugar. Blend for 10 seconds (until smooth). Pour into a chilled martini goblet. Garnish with fresh mint and a wedge of lime.
