The Vampire Kiss

Ingredients:

Lemon wedge
1 oz. chilled vodka (can be kept in the freezer)
1/2 oz. fresh lemon juice
Ice
Brut Champagne
Raspberry liqueur

Preparation:

Wet the outside of a chilled martini glass with a lemon wedge, then carefully dip into red sugar. Make sure to keep the sugar on the outside of the glass.

Note: Red sugar = sugar + red food coloring

In a cocktail shaker, add chilled vodka, fresh lemon juice and ice. Give the mixture a short shake, then strain into the sugar-rimmed martini glass. Top off the glass with a chilled Brut California Champagne, which has been on ice or refrigerated for 3 to 4 hours.

Note: Brut is the driest of champagnes, which means it has the least amount of sugar.

For the finishing touch, float raspberry liqueur in the drink by pouring it from a jigger onto the back of a bar spoon, or into a bar spoon placed just slightly under the wash line, to keep it separated from the rest of the drink and give it a layered look.
