Blush Sauce and Amatricana Sauce From Dinner Date Episode 113 - Get a Sneak Peek
Base Sauce
1 red onion (medium size)
6 cloves garlic
1/4 cup basil
1/4 cup parsley
1 Tbsp. crushed red pepper flakes
1 28-oz. can tomato puree
1 6-oz. can tomato paste
1 Tbsp. sugar
1/2 cup water
1/4 cup olive oil
Directions:
Prep: 15-20 minutes
- Chop red onions.
- Mince garlic.
- Chop basil and oregano.
- Tear parsley into small pieces.
- Open tomato puree and tomato paste.
- Measure out sugar and water.
Make sauce: 10 minutes
- Heat deep sauce pan with olive oil over medium heat.
- Add onions, garlic, basil, oregano and parsley; saute for 8 minutes.
- Add paste and cook for one minute.
- Add puree and water and cook one additional minute.
Blush Sauce
Ingredients:
1/3-cup heavy cream
1/3-cup parm cheese
1/3-cup basil
1 cup red sauce
Directions:
Prep: 10-15 minutes
- Using the red sauce we have simmering, take two ladles of the red sauce and put into small sauce pan, add cream, parm cheese and basil.
- Stir and simmer on low.
Amatricana Sauce
Ingredients:
1 medium white onion
1/4-cup pancetta
1/3-stick butter
1/3-cup basil
1 cup red sauce
Directions:
Prep: 10-15 minutes
- In a small saucepan add butter, onions and pancetta.
- Cook down 4 minutes and add two ladles of red sauce.
- Simmer on low flame.
