Wine's acidity and summertime sipping go hand in hand. The acidity in wine is what makes your mouth water and keeps you wanting more. It's also crucial for food and wine pairings because it balances the wine's other, often overwhelming, flavors of fruit and tannins. Without acidity a wine is off balance, bland and better off left on the shelf.
