Shrimp Scampi Firemen Style

Yield: 4 to 6 servings

Ingredients:

1/2-cup butter
4 tablespoons minced garlic
1/4-cup dry white wine
2 tablespoons lemon juice
1 1/2 pounds large shrimp, peeled and deveined
8 sprigs parsley, finely chopped
Salt and pepper
Lemon slices, as a garnish

Garlic bread:

1 loaf Italian bread
4 ounces butter, melted
4 cloves garlic, minced
2 sprigs parsley, finely chopped
1/2 teaspoon paprika

Serving suggestion: pasta

Instructions:

  1. Preheat oven to 400 degrees F.
  2. In a large skillet, melt the butter over medium heat. Add the garlic and cook until softened but not browned, about 1 to 2 minutes.
  3. Add the wine and lemon juice and cook for another 2 minutes. As the sauce thickens, add the shrimp and cook for about 1 to 2 minutes making sure not to over-cook them. As a final touch, add the parsley and season with salt and pepper.
  4. To make the garlic bread, slice the bread lengthwise. Spread the butter over the cut side of the bread. Spread the minced garlic evenly over the butter and sprinkle the parsley and paprika over the top. Bake in the oven for about 4 minutes until lightly browned.
  5. To serve, cook your favorite pasta and top with shrimp and sauce. Garnish with lemon slices, chopped parsley, and slices of garlic bread.
