Ingredients:

For Orange Waffle:
1 1/4 cups icing sugar
1/3 cup butter, melted
7 Tbs. orange juice
1/4 cup egg white
1 cup all-purpose flour
1 Tbs. grated orange peel
fresh berries, for garnish
confectioners' sugar, for garnish

For Bitter Chocolate Mousse:
4 oz. bitter chocolate
2 egg yolks
1 Tbs. icing sugar
1 Tbs. chocolate spread
3/4 cup whipped cream

Instructions:

  1. Preheat oven to 360F.
  2. To make the orange waffle, mix icing sugar with butter then mix in the orange juice and egg white. Finally, add flour and mix. Keep it in the refrigerator for 20 minutes.
  3. Spoon batter to create circles on a silpat or parchment lined backing sheet and dust with grated orange peel. Bake for 4 minutes. Create quickly the desired forms to the waffle.
  4. Break chocolate and warm up in a saucepan to approximately 100F.
  5. Beat in egg yolk and icing sugar.
  6. Remove mixture from heat and cool it while beating.
  7. Combine melted chocolate and chocolate spread with whipped cream.
  8. Pour cream into egg yolk mixture and refrigerate for at least 2 hours.
  9. To serve the mousse, dip a spoon in a bowl of tepid water and spoon out the desired amount of mousse and create some quenelles to put on the orange waffle.
  10. Garnish with some fresh berries and a dusting of confectioners' sugar.
