Pasteurized vs. Raw
- Because the US has strict guidelines regarding pasteurization of milk, cheeses aged less than 60 days must be made from pasteurized milk in order to be sold in the United States.
- All of Sweet Grass Dairy's fresh cheeses are made from pasteurized milk, but their aged cheeses are made from raw milk, which is believed to make better cheese overall.
Three Simple, but Wonderful, Ingredients
- Almost all of Sweet Grassy Dairy's 15 cheeses are made from three simple ingredientsmilk, salt, and enzymes. Additional ingredients, mostly used to roll onto the fresh cheese, include organic pecans, peppercorns, herbs, and French grapevine ash.
- Sweet Grass Dairy uses mainly Jersey cows for their milk. Jersey cow milk is higher in butterfat than regular milk, so the milk is a bright yellow color.
Lucky Goats and Cows
- The diets of their goats and cows affect the taste of their respective cheeses. Sweet Grass' animals have the run of the pasture and graze on summer clover, cow peas, millet and sunflowers.
- Allowing the animals to graze freely also keeps their stress levels low, which contributes to the quality of the cheese. Cows and goats in factory farms are usually kept in concrete stalls, and fed there as well.
