Cashmere and Sherry (212)
While Cashmere is considered the most luxurious fiber in the world most Americans don't realize that a fine glass of sherry is also a luxury.

Cashmere Facts:

  • Cashmere is the fine fiber that comes from the soft undercoat or under layer of hair of certain goats.

  • It takes one of these rare goats four years to produce enough cashmere for one sweater.

  • In order to collect the cashmere, each goat is combed by hand every spring. The fleece is then collected and sorted by hand. In addition, the sweaters are usually knit on hand-operated machines.

Sherry Facts:

  • Sherry can only be produced within the "Sherry Triangle" – formed by the Atlantic Ocean, the Guadalete and the Guadalquivir rivers – between the towns of Jerez de la Frontera, El Puerto de Santa Maria, Sanlucar de Barrameda.

  • The ripening of Sherry takes place in American oak barrels with up to 600 liters volume. Some emptiness is left in these barrels and the tops at the upper parts of these barrels are put on without tightening, so that the wine is in contact with the air.

  • Ageing wines from Jerez takes place through the laborious, precise process known, as the "criaderas y solera"system. In this process, the younger wines are blended slowly and methodically with other more mature ones. The older wines impart their flavor to the younger ones, while the latter "freshen" the former due to their youth and strength. The wine for bottling is only drawn from the lower tier of casks, called "solera", as they lie on the ground.

  • Tio Pepe Fino is probably the most distributed Spanish product worldwide, with exports to more than 100 countries and presence in the best hotels and restaurants in the world.
