Ingredients:
6 cod steaks
3 large potatoes, peeled and sliced 1/4" thick
3 artichokes, rinsed well, top third removed and leaf tips trimmed, cut into four long quarters
4 Tbs. melted butter (2 Tbs. to be used separately)
3 garlic cloves minced (1 clove to be used separately)
1 onion, chopped
1/4 cup of fresh parsley chopped
4 Tbs. lemon juice (2 Tbs. to be used separately)
1/2 cup water
lemon wedges
fresh ground pepper
small dash cayenne pepper
salt
Instructions:
1. Preheat oven to 375F.
2. Prepare a foil-lined, medium-sized, shallow baking pan. Brush melted butter on foil until entire bottom of pan is greased.
3. Sprinkle both sides of cod with salt and pepper. Place cod single file in baking pan.
4. Place sliced potatoes in baking dish on one side of cod and sliced artichokes on the other.
5. In a small saucepan mix together butter, lemon juice, onions, garlic, parsley, cayenne pepper, fresh pepper and salt. Cook on low heat until onions are soft.
6. Remove mixture from heat and brush mixture generously over cod steaks.
7. In a bowl, prepare another mixture of lemon juice, melted butter and garlic and brush generously over potatoes and artichokes. Sprinkle with salt and pepper.
8. Add water to bottom of pan and cover with aluminum foil. Place in oven and bake 20-30 minutes, until fish flakes easily with a fork and potatoes and artichokes are tender.
9. Serve with lemon wedges.
