garlic clove
1 cup dry white wine
1 tsp. lemon juice
minced cheeses
4 tsp. cornstarch
1 tsp. of kirsch or brandy
fresh nutmeg and fresh pepper to taste
Directions:
Rub garlic in a pot, then discard the garlic.
Add dry white wine and lemon juice. Bring the mixture to a simmer.
Add the cheese slowly, a handful at a time, with cornstarch (this keeps the cheese from separating). Don't let it boil.
Stir in a figure-eight motion to help break up the cheese.
