2-2/3 cups unsalted margarine
3-1/2 cups packed brown sugar
3 large eggs
5 Tbs. honey
1 Tbs. vanilla
1-1/2 tsp. salt
4 cups unbleached flour
4 lbs. old fashioned rolled oats
8 oz. dark raisins
8 oz. coarsely chopped walnuts
Directions:
Preheat the oven to 350 degrees F and line the baking sheets with parchment paper.
Cream the margarine and sugar in a very large bowl until smooth. Beat in the eggs, honey, vanilla, and salt until smooth and creamy.
Using a large wooden spoon or your hands, work in the flour and oats until both are well combined. Add the raisins and walnuts and mix until evenly distributed.
Shape the dough into large 3 inch balls and press into 5-6 inch flat cookies on the baking sheets.
Bake the cookies 15 minutes or to desired level of doneness.
