Robalo Stuffed with Seafood
Ming's Quest : Episode FLMNG-103

Ingredients:

Serves 8-10

8 lbs. robolo fillets
1/2-cup extra-virgin olive oil
1/2-lb. butter
2 cups chopped onion
12-1/2 cups chopped tomatoes
1-3/4 cup green olives
1-1/3 cup diced jalapenos
3 tsp. bay leaf
3 tsp. Mexican thyme
1/3-cup parsley
2 lbs. cooked shrimp
2 lbs. cooked crab meat
2 lbs. cooked octopus
6 cups mayonnaise
salt and pepper to taste
4 oranges
1 sliced red bell pepper
1 bunch fresh parsley
aluminum foil to cover

Directions:

  1. On an oiled sheet tray layout fish fillets to form one large fillet.
  2. In a very large saucepan add olive oil and butter.
  3. When hot add onions, tomatoes, jalapenos, bay leaves, thyme and parsley.
  4. Add shrimp, crab and octopus.
  5. Cook 10 minutes.
  6. Chill completely.
  7. Place stuffing down center of fish fillets.
  8. Fold sides to cover filling.
  9. Cover with foil and bake 10 minutes at 350 degrees F.
  10. Add layer of mayonnaise and broil 5 minutes.
  11. Garnish with sliced red bell peppers, parsley and oranges
