Robalo Shrimp (103) Follow along as Chef Ming Tsai travels to the port town of Vera Cruz in Southeastern Mexico to catch some of the freshest fish and shrimp south of the border. He heads out early in the morning with two local fishermen and they catch shrimp and barter with another fishing boat to buy two huge robalos.
After a full day of fishing, Ming decides to share his fresh caught fish with a local award-winning chef who uses the catch to prepare her signature robalo dish that's filled with tomatoes, Mexican spices and local seafood. Follow Ming's recipe to that uses a fusion of east-west spices and traditional Mexican zest to make a mouth-watering dish called Robalo En Pappillote with Scallion-Ginger Sauce. Ole!
