Balinese Duck (106) Join Chef Ming Tsai as he escapes to the magical island of Bali to discover the delicate cycles of life between the Balinese people and their foods. While marching through rice paddies, Ming learns how the duck pulls double-duty by taking care of Bali's most important food crop, rice, and providing meat for the local farmers.
Ming also comes face-to-face with another winged treasure of the islands, the Balinese fruit bat, which leads him to some of the sweetest fruits in Bali. Putting all of his efforts of the day together, Ming shares the recipe for his signature dish, Balinese Duck "Confit" with Root Vegetable Mash Warm Exotic Fruit Salsa.
