Chinook Salmon (108) Chef Ming Tsai ventures out into the cold Pacific Northwest coastal waters to find the mighty Chinook, or "King Salmon," but first he gets knee deep in icy cold water at a fish hatchery to learn more about these kings of the water and their mating behavior.
After visiting the hatchery, Ming and his fishing guide head back to the boat to catch wild salmon heading up river to spawn. Ming learns this is no easy task as he wrangles with his fishing gear to snag a big one. He then uses his East-West spices and techniques to prepare a new style of salmon sashimi encrue flashed with hot virgin olive oil and a salmon tempura roll.
