Vermont Mushrooms (120) Chef Ming Tsai heads into the green mountains of Vermont to join a wild mushroom collector and forage for the freshest chanterelle mushrooms in the land.
Next, Ming goes hunting with birds of prey as he learns the ancient art of Falconry from the masters. Combining the wild mushrooms and game birds, Ming creates an original recipe: five-spice chili-tea rubbed partridge with grilled fennel and wild chanterelle orzo risotto.
