Chef Ming Tsai hits mountain bikes on a Northern California adventure trail in search of goats — and more importantly, goat cheese.

At Redwood Hill Farms in the beautiful Sonoma Valley, Ming tries his hand at milking and helps make some goat cheese before biking to a nearby winery where they grow organic vegetables and herbs. At the end of the day, Ming puts everything together to make a sesame-thyme crusted goat cheese and arugula salad with warm shitake-tomato vinaigrette.
