    Family Recipe: Menisha

    • Menisha is rustic Italian soup made from hearty greens.
    • Use bolting greens from the garden and cool weather/fall greens like kale and chard.
    • Simmer for 30 minutes.
    • The greens will turn from bright green to a dark "army" green.

    Pasta Making

    Lenora Partacelli, owner of Napa Valley Olive Oil Mfg. Co., offers these tips for making gnocchi della nonna:

    • In Italy, gnocchi are typically a first course, not a main course.
    • Shaping gnocchi takes time and dexterity. Try making a batch to practice with first.
    • The dough is ready when it is smooth, but slightly sticky. It can also be cut into circles or squares to make ravioli.
    • Cook gnocchi for 60 seconds from the time they rise to the surface.
    • Bake the potatoes over a layer of kosher salt at 450 degrees F for one hour.
