Sheila Bridges' Lobster Rolls and Sharktini
Lobster Rolls
Serves 4
Ingredients:
1 1/2 cups cooked lobster (about a 2-pound lobster), cut into 1/2- inch pieces
1/3 cup minced celery
3 Tbs. minced scallion
1 Tbs. minced flat parsley leaves
1/2 cup whole egg mayonnaise
1 Tbs. fresh lemon juice
several dashes Tabasco
freshly ground pepper
16 dinner rolls
Directions:
- In a bowl, combine lobster, celery, scallion and parsley.
- In another bowl beat the mayonnaise with the lemon juice, Tabasco and the pepper and combine it with lobster mixture.
- Split the rolls and spoon the lobster mixture into the center.
Sheila's Sharktini
Serves two
4 oz. Ciroc Vodka
1 oz. Triple sec
1 oz. Blue Curacao
Shake all four ingredients together in a shaker with ice. Strain and serve in cocktail glasses.
