Cha-Cha Drumsticks
16 chicken drumsticks (about 2 1/2 lbs.)
1 16-oz. jar chipotle salsa
Instructions:
- Skin chicken if desired.
- Place chicken in a self-sealing plastic bag set in a shallow dish.
- Add enough salsa to coat chicken (about half a jar). Reserve remaining salsa for serving.
- Marinate in the refrigerator for four to 24 hours, turning bag occasionally.
- Drain chicken, discarding marinade.
- Line shallow baking pan with foil.
- Place chicken on foil and bake, uncovered, in a 375F oven for 45 minutes or until chicken is 180F, turning chicken once.
- Serve with remaining salsa.
Tip: For chicken breast halves, marinate eight skinless, boneless chicken breast halves as directed above. Bake uncovered in a 375F oven for 25-30 minutes or until chicken is 170F, turning chicken once. Serve as above. Makes 8 servings.
