Recipe: Spuds on a Stick

Ingredients:

Serves 2

14 oz. can whole new potatoes, drained
2 Tbs. reduced calorie butter, melted
1 tsp. dried Italian seasoning or 1 Tbs. chopped fresh thyme
1/2-tsp. paprika

Directions:

  1. Fire up your grill to medium.
  2. Mix everything except 1 tablespoon of the butter in a Ziploc bag.
  3. Seal the bag and turn it over a few times to coat the spuds
  4. Marinate spuds for 10 minutes
  5. Double-skewer the spuds, impaling them on two skewers to keep them from spinning around.
  6. Grill, turning now and then, for about 8 minutes or until you get good sear marks.
  7. Remove to a plate.
  8. Pour the remaining butter into the bag, swish it around to mix in any seasoning that stuck to the bag, the pour over the spuds.
