Citrus Steamed Alaskan Halibut

Butter-Glazed Lobster

Serves 4

Ingredients:

4-6 oz. filets of halibut, boned and skinned
kosher salt
pepper
olive oil
lemon juice
1/2 tsp. algae salt or Fleur de Sel

For the steamer:

4 oranges
4 lemons
4 limes
1 qt. white wine
1 qt. water

Instructions:

  1. Generously season both sides of halibut with kosher salt and pepper.
  2. Brush bottom of steamer with olive oil.
  3. Place fish in steamer.
  4. Check temperature of fish with a cake tester until it reads 135-140F.
  5. Remove fish from steamer when done, drizzle with lemon juice and sprinkle with algae salt.
