two 1 1/4-lb. lobsters, steamed in white wine
1 tsp. unsalted butter
kosher salt
freshly ground pepper
2 lemons, juiced
3 Tbs. lobster stock (can be purchased at a specialty gourmet store)
Instructions:
Boil white wine and steam lobsters for 13 minutes.
Remove lobsters from shells.
Melt butter and add lemon juice and lobster stock. Bring to a boil, reduce heat and simmer until glaze coats the back of the spoon.
Add lobster meat and heat through. Serve over vegetables and under halibut.
