Copper River Salmon with Caviar

Serves 4

Ingredients:

four 3 oz. Copper River Salmon filets, boned and skinned.
2 cups extra virgin olive oil
3 cloves garlic, crushed with the back of a knife
8-10 stems parsley
8-10 stems dill
1/2 tsp. kosher salt
1/2 tsp. freshly ground black pepper
1 lemon, zest and juice
2 oz. golden osetra caviar

Instructions:

  1. In a small stainless steel saucepan, combine olive oil, garlic and herbs.
  2. Add salmon filets and seasonings.
  3. Place over low heat and slowly bring to 120F, cooking for approximately 20-25 minutes or until medium rare.
  4. Remove and season with lemon juice and zest. Place a half ounce of caviar over each salmon filet.
