Herbal Foam

Makes 1 cup

Ingredients:

1/2 lb. fava beans, shelled
1 garlic clove, peeled and placed through a garlic press
2 tsp. lemon zest
1 Tbs. olive oil
1/2 tsp. freshly chopped oregano
1/2 tsp. toasted sesame seeds
kosher salt, to taste
freshly ground black pepper

Instructions:

  1. Blanch fava beans for two minutes in boiling salted water. Cool immediately in ice water.
  2. Remove tough skin from blanched beans.
  3. In a food processor or blender, combine all the ingredients and puree until smooth. Reserve.
