Copper River Salmon With Caviar

Fava Bean Hummus

Peeky Toe Crab Salad

Makes 3 cups

Ingredients:

1 bunch dill
1 bunch mint
1 bunch tarragon
3 cups 2 percent milk
1 Tbs. lemon juice
1 Tbs. toasted coriander seeds
pinch of salt

Instructions:

  1. In a stainless steel pot, combine all ingredients.
  2. Bring to a simmer and let steep for half an hour. Strain.
  3. Reheat to approximately 175F. Mix to a frothy foam.

Plate arrangement:

  1. Arrange salmon off center with a quenelle of fava bean hummus on one side and a quenelle of crab salad on the other side.
  2. Divide caviar evenly among the plates, placing it on top of the salmon or on the side. Finish by spooning the herbal foam onto the plate.
