Thyme Smoked Chicken Breasts

Yield: 6 servings

Ingredients:

6 chicken breast halves, skin intact
1/2 bunch fresh thyme, tough stems removed
salt and pepper to taste
olive oil for coating chicken

Instructions:

  1. Loosen skin on each chicken breast on one side and tuck a few sprigs of thyme underneath.
  2. Season with salt and pepper and rub chicken breasts with oil.
  3. Arrange chicken pieces on rack one inch apart, skin-side up, to allow for smoke circulation.
  4. Smoke on medium heat for 10 minutes per half pound.
  5. Remove from smoker, garnish with fresh thyme and serve.
