Yield: Serves 4-6
Ingredients:
2 heads broccoli rabe
1/4 cup olive oil
3 cloves garlic, chopped
1/2 tsp. crushed red pepper flakes
1/4 cup dry breadcrumbs
salt and pepper to taste
Instructions:
1. Blanch broccoli rabe in a large pot of boiling salted water for 2-3 minutes.
2. Drain and shock in ice bath.
3. Drain and wrap in a dry towel, squeezing out any excesss water.
4. In a large sauté pan, cook garlic and crushed red pepper flakes for 1 minute.
5. Add broccoli rabe and cook and stir until heated through.
6. Stir in breadcrumbs and toss all together.
7. Season to taste with salt and pepper.
