Cleaver Company Pate Brisee for Chicken Pot Pie

Ingredients:

5 cups all purpose organic flour
1 stick of Ronnybrook butter
1 cup organic chicken stock
1/2-tsp. minced organic garlic

Directions:

  1. Work the soft butter into the flour.
  2. When crumbly, add the chicken stock and the garlic and work into a ball.
  3. Shape into a flat disc, about 2 inches thick, and wrap in plastic wrap.
  4. Chill overnight.
  5. Remove from refrigerator the next day and roll out to 1/4-inch thickness, dusting the work surface with a little organic all purpose flour.
  6. Cut to shape.

Note: It is unusual to add chicken stock to a pate brisee, but doing so adds richness and another layer of flavor.
