Roasted Beet Salad
The Perfect Party : Episode FLTPP-203

This recipe is provided courtesy of Marc Meyer, executive chef of New York's Five Points Restaurant.

Ingredients:

1 bunch red beets, top on
2 small heads frisée
1/2-lb. chopped, pitted dates
4 blood oranges
champagne vinegar
extra-virgin olive oil
salt and pepper

Directions:

  1. Pre-heat oven to 350 degrees F.
  2. Put beets in shallow roasting pan and almost cover with water.
  3. Cook for 1 hour or until tender.
  4. Under running water, peel beets.
  5. Roughly chop and place them in bowl of food processor. Add vinegar and olive oil and pulse until medium-fine.
  6. Segment oranges.
  7. Spoon beet puree on platter, dress frisée and toss with orange segments.
  8. Place on beets and garnish with dates.
  9. Season with salt and pepper to taste.
