Roasted Beet Salad The Perfect Party : Episode FLTPP-203
This recipe is provided courtesy of Marc Meyer, executive chef of New York's Five Points Restaurant.
Ingredients:
1 bunch red beets, top on
2 small heads frisée
1/2-lb. chopped, pitted dates
4 blood oranges
champagne vinegar
extra-virgin olive oil
salt and pepper
Directions:
- Pre-heat oven to 350 degrees F.
- Put beets in shallow roasting pan and almost cover with water.
- Cook for 1 hour or until tender.
- Under running water, peel beets.
- Roughly chop and place them in bowl of food processor. Add vinegar and olive oil and pulse until medium-fine.
- Segment oranges.
- Spoon beet puree on platter, dress frisée and toss with orange segments.
- Place on beets and garnish with dates.
- Season with salt and pepper to taste.
