1-1/2 lb. winter greens (mustard greens work well)
3 red pears, not too ripe
2 sweet onions, Maui onions or Walla Walla onions
2 tsp olive oil
1/4-stick butter
salt
black pepper
Directions:
Wash the greens and remove the center rib.
Chop into 2-inch pieces.
Julienne pears on a mandolin from the Asian market
Julienne the onions.
Heat oil in a saute pan, sweat the onions until they start to brown. Add the greens, salt and pepper and cook until wilted (2-3 minutes).
Add the pears and butter, sauté for 2 minutes.
