8 mahi-mahi steaks (1/2 lb. each) 1 small eggplant, julienned 2 red bell peppers, julienned 1/2 cup marinated artichoke hearts 1 1/2 Tbs. chopped fresh oregano leaves 1/3 cup olive oil 1 Tbs. balsamic vinegar salt and pepper
