Jungle Café/Aviation Archaeologist (213)As an executive assistant for various marketing firms and media corporations in Miami, guest Miriam Merino was afforded many opportunities for fine dining at a variety of restaurants. Her love of food and an attraction to the enjoyable atmosphere of eateries fueled her dreams of someday having her own dining venue in Costa Rica. Her dreams were eventually realized at the Jungle Groove Cafe.
Next, meet Ric Gillespie, who worked for 12 years as an insurance executive for small airports. In a company plane, Gillespie spent most of his workdays flying around the country to design insurance programs and settle claims. A promotion took him out of the field and into the office, to the confines of a desk job. Missing the life of an aviator, he decided to combine his passion with aviation history by creating a non-profit organization that supports uncovering the great mysteries of aviation.

- She traveled to Costa Rica with only $7,000.
