How to Buy Fresh Fish

Remember that a truly fresh fillet is moist, firm and odorless.

When at the market, look for:

• Slime!
  
• Firmness
  
• Bright eyes
  
• Vibrant color
  
• No smell

Hints:

• Head-on fish can add approximately $1 more per pound to the price.

• Wild trout is not commercially available. So if you want it, you'll have to catch it yourself.

• Farm-raised fish can cost as little as half the price of wild-caught fish.
