- The bottom of the wok is where the cooking takes place.
- The sloped sides are for resting cooked food at a slightly lower temperature.
- In addition to stir-fry, a wok can also be used for deep-frying, braising or steaming.
- When shopping for a wok, for electric burners look for a wok with a large flat spot on the bottom.
- Round-bottom woks are best for flame burners.
- Non-stick surfaces aren't necessary.
- A spider or skimmer is one of the most versatile, useful and inexpensive tools you can have in the kitchen. (The spider skimmer is basically a strainer.)
