Did You Know?
The browning in baking is caused by caramelization of sugars and the Maillard reaction, which is a chemical reaction between an amino acid and a reducing sugar, usually requiring heat.

Did You Know?
Mixers should not be confused with blenders. Blenders contain sharp blades and typically operate at higher speeds that chop, liquefy or otherwise break down larger food items. A mixer is a much slower device without blades.

Buyer's Guide

  • Stand-up mixers are best for whipping cream or egg whites; mixing cake batter and cookie dough; kneading bread dough.
  • There's a huge price range — anywhere from $40 to $400.
  • They do take up a lot of space.
  • Match the machine to the way you prepare foods, but you may find you need more than one.
  • If you're a dedicated baker, you'll probably want to invest in a heavy, powerful stand mixer, because it can knead even two loaves' worth of bread dough with ease.
