Roasted Sweet Potatoes
Ingredients:
6 medium sweet potatoes, about 10 oz. each
1 Tbs. olive oil
Salt and freshly ground pepper
Instructions:
- Preheat the oven to 350?.
- Rub each potato with some of the oil and prick each all over with a fork 5 or 6 times.
- Roast the potatoes directly on the rack, placing a sheet of foil on the rack below to catch any drips, until tender, about 40 minutes. Split each and season with salt and pepper.
