Grass-fed Asian Steak and Spinach Salad

Note: This recipe was developed particularly for organic ingredients.

Ingredients:
2 Tbs. olive oil
1 sweet red onion, cut in large slices
2 garlic cloves, minced
1/2 lb. grass-fed steak, thinly sliced
juice of 2 limes
1 tsp. brown sugar
1 Tbs. soy sauce
1 Tbs. cilantro leaves
1 lb. baby spinach
Instructions:

  1. Wash greens and spin dry. Place in salad bowl.
  2. Heat one tablespoon olive oil, add sliced onion and sauté over medium high for two minutes, stirring constantly. Arrange hot onion slices on greens.
  3. Mix garlic, lime juice, sugar and soy sauce, set aside.
  4. Add remaining tablespoon olive oil to pan. Sear steak until almost done to your liking, about five minutes.
  5. Slice thinly and add back to pan. Add lime juice mixture to meat, toss briefly and remove from heat.
  6. Arrange over onions and greens and serve immediately.
