Blueberry and Ginger Clafoutis

Note: This recipe was developed particularly for organic ingredients.

Serves 6
Ingredients:
1 cup milk
3 eggs
1/2-cup flour
1 Tbs. sugar
2 tsp. vanilla extract
3 cups blueberries
1 Tbs. candied ginger, chopped
1/4-cup sugar

Instructions:

  1. Preheat oven to 325 degrees F. Butter an 11-inch deep dish pie plate or shallow medium baking dish.
  2. Place milk, eggs, flour, tablespoon of sugar and vanilla extract in a blender and mix well.
  3. Put blueberries and chopped candied ginger in buttered dish and sprinkle with 1/4-cup sugar.
  4. Pour batter over and bake 30 minutes
  5. Serve warm with cream or ice cream.
