Spicy Cinnamon Roasted Pork with Fennel and Citrus Marmalade

Ingredients:

2 pork tenderloins
2 Tbs. cinnamon
2 tsp. cayenne pepper
1 Tbs. light chili powder
1 Tbs. toasted coriander, ground
1 tsp. garlic powder
2 tsp. salt
1 tsp. black pepper, coarse ground
4 Tbs. olive oil

Instructions:

  1. Preheat oven to 350F.
  2. In a bowl, mix all spices, salt and pepper. Coat the entire outside of pork with spice mix.
  3. Drizzle pork with olive oil and place in a roasting pan.
  4. Place pan in oven and slow cook pork for 20 minutes or until cooked through and pulls apart easily. Let cool.
  5. Check seasoning and adjust spice or cinnamon if needed.
  6. Steam asparagus to serve alongside.

Fennel and Citrus Marmalade

Serves 6

Ingredients:

1 large head fennel, small diced
2 cups orange juice
2 Tbs. brown sugar
2 large oranges
1 Tbs. cilantro
1 tsp. salt

Put fennel in a pot with orange juice and brown sugar. Simmer for 25-30 minutes until reduced by three quarters and thickened. Season with salt and add in cilantro.
