Spicy Cinnamon Roasted Pork with Fennel and Citrus Marmalade Simplify Your Life : Episode FLSYL-320
Ingredients:
2 pork tenderloins
2 Tbs. cinnamon
2 tsp. cayenne pepper
1 Tbs. light chili powder
1 Tbs. toasted coriander, ground
1 tsp. garlic powder
2 tsp. salt
1 tsp. black pepper, coarse ground
4 Tbs. olive oil

Instructions:
- Preheat oven to 350F.
- In a bowl, mix all spices, salt and pepper. Coat the entire outside of pork with spice mix.
- Drizzle pork with olive oil and place in a roasting pan.
- Place pan in oven and slow cook pork for 20 minutes or until cooked through and pulls apart easily. Let cool.
- Check seasoning and adjust spice or cinnamon if needed.
- Steam asparagus to serve alongside.
Fennel and Citrus Marmalade
Serves 6
Ingredients:
1 large head fennel, small diced
2 cups orange juice
2 Tbs. brown sugar
2 large oranges
1 Tbs. cilantro
1 tsp. salt
Put fennel in a pot with orange juice and brown sugar. Simmer for 25-30 minutes until reduced by three quarters and thickened. Season with salt and add in cilantro.
