1 cup plain yogurt
2 Tbs. onion, minced
1 clove garlic
1 Tbs. minced ginger
1/2 lime
1 lb. chicken breast, pounded thin and cut into 1 1/2-inch wide strips
3/4-cup smooth peanut butter
1/4-cup soy sauce
1 Tbs. brown sugar
1/2-cup boiling water
Skewers soaked in water for 5-10 minutes
Instructions:
In a large bowl combine yogurt, onion, ginger and juice of half a lime. Add chicken strips and toss to coat. Refrigerate overnight or for at least three hours.
Remove chicken and thread on skewers. Grill on each side on grill or grill pan until cooked through.
In a separate bowl, combine peanut butter, soy sauce, brown sugar and water and whisk until smooth. Serve chicken with peanut dipping sauce on side.
