Healthy Snacks: Carob Brownies

Makes 16 brownies

Ingredients:

2 cups whole wheat flour
1/3-cup carob powder
2 tsp. baking powder
1/3-cup honey
1/2-cup unsweetened applesauce
1 tsp. vanilla extract
1 cup water
1/4-cup chopped nuts (optional)

Instructions:

  1. In a large mixing bowl, combine flour, carob powder and baking powder.
  2. In a separate bowl, thoroughly mix remaining ingredients except nuts.
  3. Add dry ingredients to wet ingredients and mix well. Stir in nuts if using.
  4. Pour batter into a nonstick or lightly oiled 8-inch square baking dish.
  5. Bake at 350F for 35 minutes.

Note: Carob is rich in protein and virtually fat free, with only one-third the calories of cocoa.
