All 50 states have wineries, including Hawaii. But the same weather that attracts all those vacationers and surfers makes it hard to make wine. With no cool weather, the vines never have a chance to rest, making it difficult for the grapes to develop the complexity of flavor best for wine making. Not to worry though — pineapple has a sweetness and acidity that makes a amazing sparkling wine that actually goes great with Hawaiian regional cuisine.

  • The Hawaiian language describes only two seasons: Kau means summer, and Ho' oilo is winter.
  • The Geneva Double Curtain divides the vine into two "curtains" so that sunlight can enter from the top.
  • Brut is a term used for very dry sparkling wines.
  • Claret is an English term for Bordeaux-style wine.
