Glow-Fried Salmon Simply Wine With Andrea Immer : Episode FLSWN-204
Finland's cuisine was influenced by both Sweden and Russia, but glow-fried salmon is traditionally a Finnish food.
Ingredients:
12-oz. salmon fillet
1/4-cup coarse salt
Sauce:
1-1/2 stick butter
1 Tbs. lemon pepper
lemon juice from 1/2-lemon
1-oz. vodka
Directions:
- Cover a salmon fillet in coarse salt for flavor.
- Wipe salt off fish before cooking.
- Use wooden stakes to drive the fillet onto a board.
- Combine a stick and a half of butter in a pot with a tablespoon of lemon pepper, the lemon juice and an ounce of vodka.
- Melt over a fire, but do not boil.
- Place salmon-board upright facing fire.
- Add sauce when salmon is nearly cooked. When done, douse salmon in vodka and flambé. Extinguish and serve.
