Gazpacho
The Right Fit : Episode FLRTF-122

Ingredients:

1 tsp. raw garlic
2 Tbs. raw onion
1/2-cup sweet red pepper
1/2-cup fresh tomato
1 cup peeled cucumber
2 cups canned tomato juice, salt added
1/4-cup fresh basil
1/4-cup cider vinegar
2 Tbs. olive, salad or cooking oil
1/2 tsp. salt

Instructions:

  1. In food processor or blender, with machine running, drop garlic into feed tube, then onion. Turn machine off.
  2. Add pepper, tomatoes and cucumber; process until finely chopped.
  3. Transfer to bowl and let chill until desired temperature is reached.
  4. Add tomato juice, herbs, vinegar, oil, salt pepper and hot pepper sauce.
  5. Add liquid the soup is too thick.
  6. Cover and refrigerate for 30 minutes. Serve cold.
